Our unsmoked back bacon is dry cured to an old traditional recipe. We rub the ingredients in by hand and leave to cure over a number of days, then rinse the bacon to remove any excess cure and leave to hang. This way we can gain better taste and texture to our bacon.
We leave the rind on and slice it slightly thicker for a better eating quality.
We sugget grilling the bacon for the best results.
